Cheerio & Cranberry Biscuits

Turn your favourite cereal into a delicious lunch box filler! These crunchy, chewy biscuits are the perfect excuse to eat breakfast at any time of the day. We used cranberries and Cheerios in this recipe - but don't be afraid to get creative and make this recipe your own!

Ingredients

  • 50g coconut oil
  • 75g brown sugar
  • 1 Tbsp golden syrup
  • ½ tsp vanilla extract
  • ¼ tsp baking soda
  • 3 Tbsp EasiYo Greek Style Unsweetened Yogurt
  • ⅓ cup plain flour
  • ⅓ cup rolled oats
  • ⅓ cup dried cranberries
  • 2 ¾ cups Cheerios

Method

  1. Preheat the oven to 160°C.
  2. Combine coconut oil, brown sugar and golden syrup in a medium sized saucepan.  Place on a low heat and stir until just melted.  Take off the heat and add the baking soda, vanilla extract and yogurt and stir until combined. 
  3. Add the flour, oats, cranberries and Cheerios and stir until well coated.
  4. Line 2 baking trays with baking paper. Spoon biscuits onto the trays.
  5. Bake for 10-14 minutes until golden. 
  6. Remove the biscuits from the oven and slide them off the tray and allow to cool on the baking paper. Store in an airtight container.
