Ingredients:
• 1 cup fried coconut
• 2 large potatoes
• 1 cup EASIYO yogurt
• 2 medium zucchini
• 1 tsp salt
• 2 large carrots
• 1 tsp ground tumeric
• 125g green beans
• ¼ tsp curry powder
• juice of 1 lemon


Method:
Mix together coconut, yogurt and seasoning and set aside.
Slice the vegetables into bite sized shapes.
Steam or microwave the vegetables until just tender.
Remove from heat. Stir in the coconut mixture.
Return to heat to warm through (do not boil).
Remove from heat, add lemon juice and serve immediately.


Variations/Comments:
You may substitute asparagus, broccoli or capsicums if green beans are unavailable.
Delicious served cooled as a salad the next day.
