Fruit and Meringue delight

Ingredients:

• 4 cups strawberries
• 2 tsp caster sugar
• 2 cups (500g) EasiYo Greek Yogurt
• 4 meringue nests, crumbled



Method:

Chop the strawberries, put them into a bowl and add the sugar and leave to macerate.

Roughly crumble the meringues nests into the EasiYo Greek Yogurt and mix together.

Fold half the chopped strawberries into the meringue yogurt mixture.

Pile into a pretty glass and serve immediately.

Top with remaining strawberries and whipped cream if desired.

Also try other fruit variations, raspberries, cooked summer fruits eg gooseberries, cherries, apricots.
