Apricot Delight

Ingredients:

• 1 cup chopped dried apricots
• 1 cup EasiYo Apricot Yogurt
• 200g butter
• 1 cup brown sugar
• 3 eggs
• 1 tsp vanilla
• 1 ¼ cups flour
• 2 tsp baking powder
• Icing sugar to decorate 



Method:

Mix the apricots in with EasiYo Apricot Yogurt.
Melt the butter in a saucepan and add the sugar.

Beat in eggs one by one and then add in the vanilla and yogurt mixture.

Sift in the flour and baking powder and beat until all combined.

Pour into a lined sponge roll tin and bake at 180 Celsius for 40 minutes.

Dust with icing sugar to serve.
