
Ingredients:• 1 cup self-raising flour
• ½ tsp ground cinnamon
• 3 tbsp butter
• 1 tbsp sugar
• ½ tsp ground almonds
• 3 tbsp EASIYO yogurt
• 1 tbsp milk
• 4-5 cups stewed apple (spiced if desired)
• extra milk to glaze
Method:
Place the flour and cinnamon into a mixing bowl.
Rub in butter until mixture resembles fine breadcrumbs.
Stir in sugar and ground almonds. Mix the yogurt with the milk and add to the mixture to make a soft dough.
Place the pastry in the fridge and chill for 30 minutes.
Preheat the oven to 220C.
Remove the dough from the fridge and roll out to 5mm thick on a lightly floured work surface. Place the stewed apple in a 23-25cm pie dish so that it almost reaches the top. Lay the pastry on top of the apple and press the edges with a fork to make a pattern. Brush the pastry with a little milk and then bake for 15-20 minutes or until the pastry is cooked and golden.
Variations/Comments:Always try to be light handed when working pastry and knead gently – using the fingertips only.
Don’t over knead dough as this causes pastry to toughen during cooking.
