Ingredients:
• 2 large kumara, peeled, and sliced
• 2 tbsp chopped chives
• 1-2 tsp curry powder to taste
• 3 rashers grilled bacon, chopped
• 1 tsp lemon juice
• 1 cup EASIYO yogurt
• 1/3 cup chopped dates
• ½ cup roasted cashews
• 3 tbsp chopped coriander


Method:
Cook the kumara until just tender (kumara should be cooked and firm, not mushy).
Cool. In a bowl combine kumara, bacon, dates, coriander and chives. 

For the dressing:
Whisk curry powder and lemon juice into yogurt. Fold the dressing gently through the kumara mixture.

Just before serving add the cashew nuts and garnish with a few fresh chives.
