Ingredients:
• 1 large telegraph cucumber
• 2 tbsp parsley or mint finely chopped
• 1 cup EASIYO yogurt


Method:
Score the cucumber with a fork, then chop finely.
Drain the chopped cucumber in a strainer or paper towels for ½ hour.
Stir the yogurt and herbs into the cucumber and chill.


Variations/Comments:
Yogurt-based raitas are generally mild in taste and as such they make a refreshing side dish when served alongside a spicy curry.
