Yogurt covered Dried Fruit

Ingredients:
• 2 cups of raisin or dried fruit
• 60 grams butter
• 6 cups of icing sugar
• 1 ½ tsp vanilla
• 1 cup EasiYo Yogurt Cheese (see below) 


Method: 
Steam raisins for 5 minutes until they plump up.
Combine yogurt cheese and butter in a saucepan, stir over low heat until butter melts, yogurt cheese is soft and well combined.
Transfer to food processor.
Add one cup of ice sugar at a time until well mixed and smooth but not dry.
Add vanilla and stir.
Then add the fruit and stir well until well covered. Drop spoonfuls onto waxed paper and let dry for 3-4 hours or overnight.


Yogurt Cheese
4 cups EasiYo Natural Yogurt

Method:
Place yogurt in a strainer lined with cheesecloth over a bowl.
Cover with cling wrap to avoid anything falling in and drain overnight.
Then squeeze yogurt cheese in the cloth to remove any more whey.
After leaving for another hour to stand, place into a container.
