Ingredients:
• 2 medium potatoes
• 2 carrots
• 1 onion
• 2 cloves garlic
• 2 eggs
• 1 tsp salt
• 1 tsp paprika
• 1 tbsp oil
• ¼ cup chopped parsley
• ½ cup soft wholemeal bread crumbs
• ¼ tsp ground black pepper
• 1 cup tasty cheese grated
• 1 cup Easiyo yogurt
• ¼ cup chopped capsicum
• ¼ cup chopped spring onions


Method:
Peel, wash, and coarsely grate the potatoes, carrots, and onion.
Crush the garlic, and mix with vegetables in a bowl.
Beat together the eggs, salt, paprika and oil and add to the grated vegetables.
Stir in the parsley, breadcrumbs and pepper.

Spoon the mixture into a greased ovenproof dish and bake at 180 °C for 30 minutes.
Combine cheese, yogurt, green capsicum and spring onions in a bowl.
Pour this mixture over the vegetables and continue cooking for a further 15 minutes.
Serve hot or cold.


Variations/Comments:
Vegetables should never be soaked in water as their goodness passes into the liquid.
