Ingredients:
• 4 medium potatoes
• ½ cup EASIYO Natural Yogurt
• 4 eggs
• 1 tablespoon vinegar
• 100 g packet smoked salmon slices
• ¼ cup Easi Yo Natural yogurt
• 2 tablespoons chopped fresh dill
• Freshly ground black pepper 
 

Method:
Peel potatoes. Cut into even-sized pieces and cook in boiling salted water until tender. 
Drain, reserving 1/4 cup cooking water. Mash potatoes with reserved cooking water. beat in enough of the first measure of yogurt to make potatoes smooth and creamy.

Poach eggs in simmering water with vinegar added. Drain well.
Arrange mashed potatoes on four serving plates. Top with a poached egg and serve with smoked salmon slices.
Mix second measure of yogurt and dill together.
Spoon over egg and salmon. Grind over black pepper.


Variations/Comments:
If you haven’t got fresh dill for this recipe, use parsley.
