Ingredients:
Pastry:
• 50g butter
• ½ cup wholemeal flour
• ½ cup flour
• ice cold water

Filling:
• 75g tasty cheese, grated
• ½ cup Easiyo yogurt
• 1 large clove garlic, crushed
• ½ tsp curry powder
• ½ tsp salt
• 1 tomato, finely cut
• 1 ½ cups brown rice, cooked
• 2 bunches spinach, chopped


Method:
To make pastry:

Rub butter into the sifted flour with your fingertips and then add a little water to make a firm dough.
Roll out the dough and line a 22cm quiche or pie dish in the refrigerator for 15 minutes.

To make filling:
In a bowl mix together the cheese, yogurt garlic, curry powder, salt, and tomato.
Mix in the rice and spinach.
Place mixture into the pie case. Sprinkle with paprika.

Alternatively, for a layered effect, lay ½ the rice mixture into pie case then place spinach on top and spoon the remaining rice over spinach.
Bake in moderate at 180 °C for 45 minutes.
Serve immediately.


Variations/Comments:
Some people have difficulty digesting spicy food, however by using yogurt with spices, this problem does not arise.
