Ingredients:
• 1 cup self raising flour
• 1 tsp curry powder
• 1 egg
• 2 tbsp chopped chives
• 2/3 cup EASIYO yogurt
• ¼ tsp dried oregano
• 1 cup kernel corn, drained
• salt and ground pepper
• ½ cup creamed corn
• butter and oil, to grease


Method:
Sift flour into a bowl and make a well in middle.
In another bowl, whisk the egg and yogurt together.
Pour liquid into the flour and draw the flour in gradually, stirring with a wooden spoon to make a smooth but stiff batter.

Stir in the kernel corn and creamed corn, season with curry powder, chives and oregano.
Add the salt and pepper to taste.

Place a heavy bottom frying pan over medium heat. Grease pan with a little butter and oil.
When hot, drop a tablespoon of batter in pan.
Cook until the fritters are golden brown on both sides.

Place the fritters on absorbent paper towel and keep warm while the remaining batter is cooked.
Serve immediately.
