Ingredients:
• 2 cup carrot, grated
• 2 tbsp flour
• 2 cups parsnip, grated
• 2 tbsp brown sugar
• ½ cup water
• 1 cup EASIYO yogurt
• 3 eggs
• 2 tsp lemon juice
• 2 tbsp grated orange rind
• salt and ground pepper


Method:
Place the carrot, parsnip and water into a small saucepan and simmer until the water has almost evaporated.
Drain the vegetables well and apt dry with a paper towel.
Cool.

Whisk the eggs in a bowl and add remaining ingredients.
Fold in the carrot and parsnip.
Place in a well buttered flan dish.

Cook in a moderate oven for 45 minutes or until form in the centre.
Serve hot.
