Ingredients:
• 1 ripe avocado
• ½ cup EASIYO Natural Yogurt
• 1 tablespoon tarragon vinegar
• 1 teaspoon prepared French mustard
• Pinch cayenne pepper
• ½ teaspoon salt
• Freshly ground black pepper


Method:
Peel avocado. Remove stone. Place avocado flesh in the bowl of a food processor with yogurt, vinegar, mustard and cayenne pepper. Process until smooth. Season with salt and pepper. Serve within an hour.


Variations/Comments:
Serve this delicious dressing with nachos, tacos and other Mexican dishes or crisp green or tomato and corn salads.

Makes about 1 cup.
