Yogurt Toffee

Ingredients

  • 1 cup drained EASIYO yogurt (8-10 hours)
  • 1 tbsp butter
  • ½ cup EASIYO yogurt
  • 3 tbsp EASIYO Passionfruit flavouring
  • 2 tbsp coconut
  • 2 cups sugar

Method

Place sugar, butter, and yogurt into a heavy-based saucepan.
Stir over low heat until sugar is dissolved.
Bring to the boil. Boil with out stirring until 115°C or soft ball stage is reached (syrup forms a soft ball when dropped into cold water. It loses form when removed from the water).
Do not overcook or it will caramelise.
Remove from heat.
Leave for 4-5 minutes.

Add flavouring and coconut and beat until mixture is thick and creamy.
While still warm but firm, cut into squares.
Leave until completely set before removing from tin.

Variations/Comments

Substitute the passionfruit with your favourite EASIYO flavouring.
