Yogurt Hollandaise
Ingredients
- 1½-2 tbsp lemon juice
- ½ cup softened butter
- salt and ground pepper to taste
- 4 egg yolks
- 1/3 cup EASIYO yogurt
Method
Using a double boiler place 1 ½ tbsp lemon juice with a little salt and pepper in the upper container. (Ensure simmering water does not touch the bottom of upper container).
Add 2 tbsp of the butter and the egg yolks and whisk mixture until the sauce is thick and smooth.
Season to taste and add remaining lemon juice to taste if necessary.
The sauce should have a delicate lemon flavour but should not be too sharp.
