Spinach Yogurt Fish Fillets
Ingredients
- 450 g packet frozen spinach
- 1 onion
- 2 cloves garlic
- 25 g butter
- 2 tablespoons flour
- 1 cup dry white wine
- 1 cup EASIYO Natural Yogurt
- 4 fish fillets
- Lemon slices
Method
Thaw spinach. Squeeze out as much water as possible.
Peel onion and chop finely. Crush, peel and finely chop garlic.
Melt butter in a saucepan.
Sauté onion and garlic for 5 minutes or until onion is clear.
Stir in flour and cook until frothy.
Stir in wine and cook until sauce boils and thickens.
Finely chop spinach and add to sauce with yogurt.
Bring to the boil and simmer for 3 minutes.
Fry or poach fish fillets.
Place on a serving plate, pour over spinach sauce and serve garnished with lemon slices.
