Scrambled Eggs & Chives

Ingredients

  • 2 eggs
  • 2 tablespoons EASIYO Natural Yogurt
  • 2 tablespoons finely chopped chives
  • Salt
  • Freshly ground black pepper
  • ½ teaspoon butter
  • 2 slices wholegrain toast

Method

Lightly beat eggs and yogurt together until combined.
Mix in chives, salt and pepper. Melt butter in a small frying pan.
Pour in egg mixture and cook over a medium heat until beginning to set.
Drag a wooden spoon through mixture to let uncooked mixture run through to cook.
The mixture should form large clots.
Serve with wholegrain toast.

Variations/Comments

Making scrambled eggs with yogurt adds a new dimension to this simple popular dish.
