Vegetable Samosas
Ingredients
- Filling ..........
- 1 Vegetable Samosa Filling
- 1 Potato finely diced (5 to 10 mill cubes)
- 1 carrot finely diced - as above 2 cloves of crushed garlic.
- 1 onion finely chopped
- 1 cup of frozen peas
- 1 tbsp vegetable oil
- 2 tsp curry powder or your own spices according to taste
- 100ml of vegetable stock.
- Pastry ..........
- 2 cup flour
- 1 teaspoon salt
- 4 tablespoon clarified butter melted
- 1/3 cup yogurt
- 1 water
- 1 filling
- Oil for frying
Method
Filling:
Heat the oil in a frying pan, add the onion and garlic, mix in the spices and fry until soft.
Add the vegetables, seasoning and stir well until coated.
Add the stock, cover and simmer for 30 minutes until cooked.
Pastry:
Sift together flour and salt. Add melted butter, yogurt and water to make a stiff dough.
Knead until smooth and elastic. Roll out very thin on floured board.
Cut into 3 to 4 inch circles.
Place a small amount of filling in center leaving edges free.
Fold in half and seal edges.
Heat oil and fry curry puffs until golden.
Drain and serve with mint or coriander leaf chutney.
