Potato Bake
Ingredients
- 25g butter
- ¼ cup cream
- 4 large potatoes, peeled and finely sliced
- ground pepper
- ¾ cup EASIYO yogurt
- 4 tbsp parmesan cheese, grated
Method
Butter a shallow ovenproof dish, (large enough to hold potato slices).
Dry potatoes thoroughly. Cut butter into small pieces.
Carefully arrange potato slices in layers in dish placing a little butter in between each layer.
Whisk together yogurt and cream and carefully pour over the potatoes.
Season with pepper and sprinkle with cheese.
Bake in a preheated moderate oven for 45 minutes or until tender and golden.
Serve immediately.
