Onions Baked with Yogurt

Ingredients

  • ½ cup chicken or vegetable stock
  • 1 cup EASIYO yogurt
  • 60g butter
  • salt and ground black pepper
  • 4 large onions, sliced
  • ½ cup colby cheese, grated
  • 3 egg yolks
  • ¼ cup fresh breadcrumbs

Method

Put the stock, butter and onions into a saucepan, cover and simmer 20 minutes.
Drain and lay onions in a greased , shallow ovenproof dish.

Mix egg yolks with yogurt, salt and pepper.
Pour mixture over onions, covering them, and sprinkle with cheese and breadcrumbs.
Bake in a preheated moderate oven at 180 °C for 20 minutes or until topping is set and browned.
