Magic Mushroom Sauce

Ingredients

  • 1 clove garlic
  • 1 small onion
  • 100 g mixed mushrooms
  • 1 tablespoon oil
  • 1 teaspoon chopped fresh thyme leaves
  • ½ cup EASIYO Natural Yogurt
  • 2 tablespoons chopped chives
  • 1 tablespoon chopped parsley
  • ½ teaspoon salt
  • Pepper

Method

Crush, peel and finely chop garlic. Peel and finely chop onion.
Wipe mushrooms, then trim and slice. Heat oil in a saucepan and sauté onion and garlic for 5 minutes or until onion is clear.
Add mushrooms and thyme and cook for about 5 minutes, making sure any liquid evaporates.

Add yogurt, chives and parsley and bring to the boil. Season with salt and pepper and serve hot.

Variations/Comments

This is not a recipe for real magic mushrooms but it tastes so good, you’ll have a flavour high.
Use a mixture of different mushrooms for this or choose brown ‘ugly’ mushrooms for great flavour.
Serve with cooked meats, pasta or polenta dishes.

Makes about ¾ cup.
