Luncheon Bruschetta

Ingredients

  • 6 to 8 slices 1 cm thick oval-shaped bread
  • Olive oil
  • 1 clove garlic
  • Topping:
  • 1 avocado
  • 2 tablespoons EASIYO Natural Yogurt
  • another clove of garlic
  • ½ cup EASIYO Natural Yogurt
  • 2 tablespoons chopped chives
  • Sliced cooked lamb or beef fillet or other cooked meat
  • Redcurrant jelly
  • Snow pea sprouts

Method

Brush both sides of bread with oil. Crush and peel garlic.
Rub over bread. Grill bread until golden on both sides.
Spread with avocado mixture, redcurrant jelly and snow pea sprouts.

Topping
Peel avocado, remove stone and mash flesh in first measure of yogurt.
Mix second measure of yogurt, garlic and chives together.

Serves

4-6
