Yogurt Ice Cream

Ingredients

  • 2 ½ tsp gelatine
  • ½ cup water
  • 1 cup EASIYO yogurt
  • 1 tsp vanilla essence
  • ½ cup sugar
  • ½ cup skim milk powder
  • ¼ cup EASIYO flavouring of your choice.

Method

Sprinkle gelatine over water in saucepan and let it swell.
Gently heat mixture over a low heat until gelatine dissolves.
Cool to room temperature.
In a bowl combine with yogurt, vanilla, sugar and skim milk powder.

Pour into a lamington tray (23 x 33cm approx).
Cover with foil and freeze until almost frozen – not just set.
Transfer frozen yogurt mixture into the large bowl of fixed electric beater and beat on high until mixture doubles and becomes glossy – at least 20 minutes.

Variations/Comments

Swirl flavouring through the ice cream mixture and re freeze.
