Cucumber Raita

Ingredients

  • 1 small cucumber
  • 1 teaspoon salt
  • 1 tablespoon chopped mint leaves
  • ½ cup EASIYO Natural Yogurt

Method

Peel cucumber then thinly slice flesh. Sprinkle with salt and leave for about 1 hour. Drain well. Rinse under cold running water. Drain well. Mix mint and yogurt into cucumber.

Variations/Comments

Serve as an accompaniment to curries, with spicy meat dishes and as a filling for pita bread.

Makes about 1 ½ cups.
