Beans with Yogurt Hollandaise
Ingredients
- 500g fresh French or snake beans
- 1 ½-2 tbsp lemon juice
- ½ cup softened butter
- salt and ground pepper to taste
- 4 egg yolks
- 1/3 cup EASIYO yogurt
Method
Place beans into a small amount of boiling water, to cover.
Simmer without lid for 6 minutes or until just tender but still crisp.
Drain and serve immediately with Hollandaise sauce.
Variations/Comments
Beans can be substituted with any fresh green vegetables in season – broccoli, asparagus, artichokes or zucchini.
