Basil & Almond Pasta

Ingredients

  • 250g dried pasta (bows of penne)
  • ½ tbsp honey
  • salt and ground pepper to taste
  • 2 tbsp oil
  • ½ cup slivered almonds, roasted
  • 1 ½ cups EASIYO yogurt
  • ½ cup fresh basil 1 clove garlic

Method

Add pasta gradually to large saucepan of boiling water.
Boil uncovered for about 10 minutes or until just tender.
Drain and cool. Place in bowl and stir in 2 tbsp oil.
Process ¼ cup yogurt, basil and garlic until combined.

Place mixture into a bowl and stir in honey and remaining yogurt.
Fold dressing through pasta, season to taste.
Place in serving bowl and garnish with almonds.

Serves

4-6
